British English is NOT enabled in OSX by default. Fix that.

First enable British English as a language:

System Preferences>Language & Text>Language>Edit List>Find and tick “British English”>Drag it to the top of the list

Now open Dictionary and change the dictionary to the British English one:

Dictionary>Preferences>Tick British Dictionary and British Thesaurus>Drag them to the top of the list
